  • 2 lbs Lean ground beef (90/10)
  • 3 medium, diced into 1/2" cubes Sweet potatoes
  • 4 cups Baby spinach

  • 4 cloves, minced Garlic
  • 1 tbsp Smoked paprika
  • 1 tsp Cumin
  • 1/2 tsp Chili flakes
  • 2 tbsp Olive oil

Prep Steps

1

Roast the sweet potatoes

Toss diced sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a sheet pan and roast at 425°F for 20-25 minutes, flipping halfway, until golden and tender.

2

Brown the beef

Heat remaining olive oil in a large skillet over medium-high heat. Add diced onion and cook 3-4 minutes. Add ground beef and break apart. Cook until browned, about 8 minutes. Drain excess fat.

3

Season and combine

Add minced garlic, smoked paprika, cumin, and chili flakes to the beef. Stir and cook 1 minute until fragrant. Add roasted sweet potatoes and toss to combine.

4

Wilt the spinach

Add baby spinach to the skillet and stir until just wilted, about 1-2 minutes. Season with salt and pepper to taste.

Portion

Divide evenly across 5 meal prep containers.

Prep Tips

  • Cut sweet potatoes evenly so they cook at the same rate
  • This reheats exceptionally well — one of the best meal preps for texture after microwaving
  • Swap spinach for kale if you prefer — just add it a minute earlier

Storage

Refrigerate for up to 5 days. Reheat in the microwave for 2-3 minutes.
