Ingredients
- 2 lbs Lean ground beef (90/10)
- 3 medium, diced into 1/2" cubes Sweet potatoes
- 4 cups Baby spinach
- 1, diced Yellow onion
- 4 cloves, minced Garlic
- 1 tbsp Smoked paprika
- 1 tsp Cumin
- 1/2 tsp Chili flakes
- 2 tbsp Olive oil
- to taste Salt & pepper
Prep Steps
Roast the sweet potatoes
Toss diced sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a sheet pan and roast at 425°F for 20-25 minutes, flipping halfway, until golden and tender.
Brown the beef
Heat remaining olive oil in a large skillet over medium-high heat. Add diced onion and cook 3-4 minutes. Add ground beef and break apart. Cook until browned, about 8 minutes. Drain excess fat.
Season and combine
Add minced garlic, smoked paprika, cumin, and chili flakes to the beef. Stir and cook 1 minute until fragrant. Add roasted sweet potatoes and toss to combine.
Wilt the spinach
Add baby spinach to the skillet and stir until just wilted, about 1-2 minutes. Season with salt and pepper to taste.
Portion
Divide evenly across 5 meal prep containers.

- Cut sweet potatoes evenly so they cook at the same rate
- This reheats exceptionally well — one of the best meal preps for texture after microwaving
- Swap spinach for kale if you prefer — just add it a minute earlier
