Ingredients

  • 2 lbs Ground turkey (93% lean)
  • 3 Butter lettuce heads
  • 2 cups Diced tomatoes
  • 1, finely diced Red onion
  • 2, seeded and diced Jalapeño
  • 1 cup Shredded cheese
  • 2 tbsp Chili powder
  • 1 tbsp Cumin
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Salt
  • 1 tbsp Olive oil

Prep Steps

1

Season the turkey

Mix chili powder, cumin, paprika, garlic powder, onion powder, and salt in a small bowl.

2

Cook the meat

Heat olive oil in a large skillet over medium-high heat. Add ground turkey and break apart. Cook for 8-10 minutes until browned. Add seasoning mix and stir to coat evenly. Add 1/4 cup water and simmer 2 minutes.

3

Prep the toppings

Dice tomatoes, red onion, and jalapeños. Keep in separate containers.

4

Wash the lettuce

Carefully separate butter lettuce leaves, wash, and dry. Store wrapped in damp paper towels.

5

Portion the meat

Divide seasoned turkey across 5 containers. Pack toppings and lettuce separately to keep everything fresh.

Prep Tips

  • Keep lettuce, toppings, and meat in separate containers for best freshness
  • Add hot sauce, guacamole, or sour cream fresh at mealtime
  • The turkey mixture also works great over rice if you want a carb-up day

Storage

Meat keeps refrigerated for up to 5 days. Lettuce stays fresh for 3-4 days when wrapped in damp paper towels.
